Asparagus is one of those foods that you either love or hate. I’ve found that there really is no in between with this one. I happen to fall on the side of LOVE when it comes to this stalky vegetable, and I’ll tell you why it’s high on my list of cool foods to eat.
- It’s a green vegetable. I can’t enough of green vegetables. It’s one of those things my mom instilled in me early on. It’s rare that you’ll find me eating a meal without a green veggie on my plate.
- Not only is it green, but it comes in two other varieties- purple and white. The green asparagus gets its color due to the way that the sun produces chlorophyll and turns plants and veggies green. This is totally a science project waiting to happen.
- It just may help you improve your zen. Growing asparagus is a job for someone with a lot of patience because it typically takes 2-3 years to get a good yield of the vegetable. Grow asparagus, become more peaceful? Whatever it takes!
- It’s really good for you and considered a superfood. Asparagus is rich in fiber, folate, vitamin B-12, iron, zinc, amino acids and a host of other goodies your body needs. Asparagus is also known to help reduce the frequency of headaches, as well as help transport glucose from your bloodstream into your cells. It’s nature’s medicine.
- It’s kid-friendly. Kids love finger foods, and asparagus is one my daughter loves to munch on. It can be enjoyed cooked or raw. And it only takes a few minutes to steam, roast or pan sear.

Pan Seared Asparagus
1 bunch of asparagus with woody stems trimmed
Pinch of Kosher Salt
Ground black pepper to taste
1/2 Tablespoon minced garlic
2 squeezes fresh lemon juice
Grapeseed Oil to coat pan
In a shallow pan, heat grapeseed oil.
Add minced garlic and cook for one minute.
Add asparagus to the pan and season with salt, pepper, and fresh lemon juice.
Stir to coat evenly.
Cook asparagus 2-5 minutes or to your liking of doneness.
Serve and devour immediately.
